Usher Winter Out with Summery BBQ Ribs
Who cares that we are expected to get another 6-10 inches tonight, April 22
The winter was unbearably long. The winter was dark. The winter…is NOT OVER! There is a twinkle in my eye despite the fact that it will not stop snowing. Instead, I see flames and smell the sweet meatiness of BBQ sauce melded with tiny beads of pork fat dripping into smoldering coals.
BBQ season is almost here. Maybe some of you have already shoveled the mountain of ice and snow covering your grill and inaugurated grilling season. Unfortunately my grill is still buried under what has now become a small ice burg. But, that won’t stop me from having a fully bona fide BBQ.
There is nothing like a slow roasted BBQ ribs to trick my taste buds into believing that summer is hiding behind the corner.
It is possible to roast ribs in the oven that would rival ones cooked out in the open summer air on a grill. Here is a recipe that my family has enjoyed for years. It’s quite simple. Follow a few simple directions and you too will be sinking your teeth into summer!
Lisa’s Oven BBQ Ribs
1 rack of spare ribs
1 recipe of dry spice rub (see recipe below)
1 cup of your favorite BBQ sauce (I like Famous Dave’s Rich and Sassy BBQ sauce)
Lay a large piece of plastic wrap on the counter and place the rack of ribs in the center. Rub the ribs with the dry spice mixture all over, patting the ribs with as much of the rub as possible. Wrap the ribs tightly in the plastic wrap and allow it to rest at room temp for one hour. Preheat the oven to 350 degrees. Unwrap and discard plastic wrap and place ribs on a large baking sheet with a rim. Cover ribs with tin foil. Bake for 2-3 hours until the meat easily pulls away from the bone. Remove foil and allow ribs to cook uncovered for an additional 15-20 minutes. Increase the oven temp to 450 degrees. Baste ribs with BBQ sauce. Continue to bake for an additional 10-15min. Cut ribs in to single pieces with one bone. Serve ribs with additional BBQ sauce for dipping.
Lisa’s Dry BBQ Rub
2 Tbsp brown sugar
1 1/2 tsp table salt
1 tsp seasoned salt
1 Tbsp chili powder
2 tsp garlic powder
1 tsp onion powder
2 tsp fresh ground pepper
1 tsp dry oregano
2 Tbsp sweet paprika
Mix all ingredients together and store in an air tight container for up to 2 months in the fridge.
Lord Please let it stop snowing or change my heart to accept it…please. Living here is hard enough let alone having winter last for an extra month.
