Good Morning Negative -16 Below Zero and Happy Martin Luther King Day!


Despite freezing temps that cause your limbs to fall off after 30 minutes of exposure, there still is beauty in the cold.

Beautiful sunrises….


…hot bubble baths…


…Warm fires….


…and really good food….Inside out grilled cheese. My mouth is watering just thinking about it…


Everything is perspective. Do you see the things you can’t do or the things you can do? Life is one choice after another. To many friends and family, I may seem weird, but I like the super cold temps. It makes cuddling warmer, cooking tastier, and fires more beautiful. Even something as simple as a grilled cheese sandwich tastes better when the temperature causes you to appreciate the simple things in life, like heat. Martin Luther King had an amazing amount of perspective.

We could get all fancy, but why when even a simple one can be satisfying and special.

Here my sons and I took slices of buffalo mozzarella and placed then in a pan over medium heat. When they had melted, we placed slices of Italian bread on top of them and let them cook until they were golden brown. Then we flipped them and cooked the other side. To finish the meal, we made a light marinara sauce for dipping and had one of the most satisfying lunches we had eaten in a very long time. Why? Because it was creative, we did it together and it surprised us that it tasted soooo good! Plus, it was easy.

Now, on back to our two day game of Scrabble and making homemade Toaster Strudel.
